Vegetable Pulao - Pressure cooker recipes

I love to cook in pressure cooker a reason it is very quick and saves fuel and time and secondly the falovurs of masala / spices are blended well and every grain or bit is full of aroma and flavours. My husband likes the open cooking method say if I ask him shall we make Pulao his first choice would be to make in pot rather than cooker as he likes the bite of rice to be al-dente but i love it to be soft, and when he is not around it is one pot meal. So today we are going to make very simple yet delicious pulao.

Preparation time : 10 mins + Soaking time : 30 mins
Cooking time : 20 mins
Serves : 4
Difficulty level : Easy

Ingredients :
1 cup parboiled basmati or sella basmati rice
2 medium carrot cut into thick julienne of 2 "
2 medium onion cut into thick julienne of 2 "
1 medium potato cut into thick julienne of 2 "
few cauliflower florets
1/4 cup frozen or fresh peas
1/2 cup/ 6-8 french beans cut into 2" peices
2 tbsp ghee / clarified butter
2 tbsp olive oil
2 bay leaves
1/2 khada masala
salt to taste

For Paste :
3 medium hot green chillies
2 cloves of garlic or 1/2 tsp garlic paste
1" ginger / 1/2 tsp ginger paste

Method : 
  • Wash and soak rice in cold water wit 1/2 tsp salt for atleast 30 mins.
  • Grind the paste ingredients.
  • Heat butter and oil in pressure cooker on slow heat. When it gets hot add bay leave and jeera seeds.
  • When it is brown add vegetables saute for a min, add ginger garlic and paste saute for a 2 -3 mins or raw smell of garlic vanishes.
  • Strain rice and add, saute till it oil coats. Add salt, masala and saute for a min.
  • Add 2 1/2 cup of water and when water comes to boil, close the lid.
  • Cook for 10 min for or for 2 whistle on high flame, reduce the flame and cook for 5 min.
  • Let it cool, open the lid and serve hot with dal tadka or raita of your choice.
Note :
  • You can use normal basmati rice instead of sella, if using normal then soak for 10 mins only.
  • Adding of salt while soaking rice prevents breaking of rice and end result would be whiter and fluffy rice.
  • If using normal basmati rice use only 2 cups of water
  • Can add turmeric and tomato to the rice this will enhance the colour and taste.
  • After adding water to rice let it boil or else you will end up with a lumpy and sticky rice.
